Spinach Casserole ($2.00 per serving)


I have been making this CHEAP and EASY family favorite for years. It is also made all in one pot! You can make it for about $2.00 per serving. My kids are all grown now, but when they were kids they would ask me to make it. I still make it for my kids and now my grandkids. They love it too!

Spinach Casserole

1 LB Hamburger
1 red onion
1 16 oz container sour cream
2 boxes frozen spinach
3/4 cup minute rice
1/2 cup mayonnaise
2 cans cream of mushroom soup
1 lb grated mozzarella cheese
1 can of milk

Directions:
In large saucepan brown hamburger and onions. Add sour cream, mushroom soup, minute rice, mayonnaise, and spinach. Pour into 9x13 buttered casserole dish. Top with graded cheese and bake at 350 for approx. 30 minutes or until bubbly.
